A tasty vegan alternative to the classic hamburger: chickpea burger, guacamole, tomatoes and smoked tofu. A real treat!
For 4 people:
4 sandwiches for hamburgers
- 120 g of guacamole (possibly homemade: here is our video recipe)
- 100 g of rocket
- 10 cherry tomatoes
For the burgers:
- 180 g of canned chickpeas
- 140 g of smoked tofu
2 tablespoons of cornstarch
Salt and pepper
Olive oil
Preparation:
Pour the drained chickpeas into a bowl and add the tofu cut into small pieces. Make a puree with a mixer or a potato masher. Add the flour and season with salt, pepper and a little oil. Prepare the burgers by starting to form 4 balls with the dough. Then flatten them giving it a regular shape. Cook the burgers in a heated pan with a little oil 4 minutes per side. Heat the rolls in the oven slightly, then cut them in half. Begin to assemble the hamburger starting with a little rocket. Then continue with a chickpea burger and a spoonful of guacamole. Finally, add some cherry tomatoes cut into round slices. Cover with the other half of the bread and repeat the operation with the other three rolls. Serve immediately.
